Jamie's Ensenada Quesidilla

History:

This is a simple recipe which I discovered in Ensenada while on my travels. Ensenada is approximately 70 miles from the Mexican and American border, in the West Coast of North America. There are many different variations of this dish now but I used to make this at home long before International Starters opened.
