Goans Discovery

History:

This dish was discovered by one of our chefs, Steven, who went to Goa in India with his girlfriend, Sarah. His homework assignment was to find us a unique new recipe, hence Goans Discovery was born. After a few weeks of experimenting, we finally managed to perfect the dish. The pappadums are much softer in Goa and we could only source hard ones in the UK therefore the magic trick was to soak them in the water before adding the filling. I was in Goa myself recently and had their version of the dish which was of course excellent but we have the advantage of a fryer, which makes them much crispier. Try them at home but be careful with the hot oil.
